INGREDIENTS:
2 cups packed cilantro with stems
2 tbsp. chopped garlic
1/4 cup roasted walnuts or cashews
1/2 cup grated Parmesan
1/3 - 2/3 cup olive oil
Salt and pepper to taste
DIRECTIONS:
Roast cashews or walnuts in oven and set aside.
Clean cilantro with cold running water and let dry in
colander.
Puree all ingredients in a blender.
Salt and pepper to taste.
